Think back about five years, and food trucks were all the rage. They gave small proprietors in big cities who couldn't afford brick and mortar restaurants a chance to sell a variety of innovative dishes.
Now, the urban spotlight is on food halls -- collections of counters inside a single location, offering everything from barbecue to gelato, poke bowls to vegan meals.
