When the first trucks rolled up to the desolate parking lot at Southwest 10th Avenue and Alder Street two decades ago, there was no way to predict what was to come.

At the time, these “mobile food units" (in the county health department's parlance) were merely adding a little rent money for the lot's landlords, offering an inexpensive lunch option for hungry office workers and replacing some little-used parking spaces in one of the many empty blocks that pock-marked a downtown still recovering from the economic downturn in the 1980s.
